i am thinking about getting a used ibook, what processor would i need to be able to run mule? would 500mhz do?

In THEORY, Mule is not supposed to be computationally demanding. On the other hand, it's written, in some cases, badly, in Java. However, as independent developers, they probably have only tested it on a limited number of systems, and do not have test racks full of different computers to test it on. Try it and see!
